Gail Sauer’s Bakery Cafe is a cherished landmark in Maryborough, Queensland, where rich family traditions, exceptional pies, and sweet pastries come together to create a warm, inviting atmosphere. Our story began over a century ago with the establishment of the Sauer’s Bakery in 1919. Founded by Augie Sauer, our family business has been a part of the community for generations, providing delicious baked goods to locals and visitors alike.

From the early days, our bakery has been synonymous with quality. Augie and his sons baked pies in wood-fired brick ovens, and the famous Sauer’s pies were born. By the 1920s, we had a horse and cart delivering hot, fresh pies around Maryborough, a tradition that carried on for decades. Our signature pies and pastries became a favorite in the community, and by the 1980s, the sight of our delivery wagons with bricks on letterboxes signaled to the locals that fresh pies were on the way.

Through the years, the bakery evolved. In 1992, John Sauer took the helm, and with his family, including Gail, continued to run the bakery with the same passion and commitment to quality. Today, Gail Sauer’s Bakery Cafe carries forward this legacy, still using the original recipes that have been passed down through generations.

We’re proud to say that our pies, particularly the legendary plain pies, pasties and sweet apple pie, remain popular among our loyal customers and are still cooked to the original recipes.. The family-run bakery has grown to include a cozy dining area, where visitors can enjoy a variety of freshly baked items, from savory pies and sausage rolls to cakes, bread, and gluten-free options.
